fix(IT-Wallet): [SIW-4040] Fix simplified activation tracking

Short description

Fixes ITW_STATUS_V2 tracking for users activating IT-Wallet through the simplified flow after already having Documenti su IO active with an L3 PID.

List of changes proposed in this pull request

• Persist the implied CIE PIN identification mode during simplified activation
• Sync IT-Wallet analytics properties so ITW_STATUS_V2 is tracked as L3 (cie_pin)
• Add regression coverage for the simplified activation case introduced after feat(IT-Wallet): [SIW-4040] New ITW_STATUS activation values #8023

How to test

• Run the IT-Wallet machine regression tests
• Run IT-Wallet analytics property tests
• Verify that a simplified activation from an existing L3 PID tracks ITW_STATUS_V2 = L3 (cie_pin)
