fix: update proposals and assignment columns

Description

This PR improves the sorting and display of information in the proposal and assignment columns.

Motivation and Context

The changes were necessary for enhancing the user experience by providing more relevant and organized information. The sorting and display of information in the proposal and assignment columns were not up to the mark, causing difficulty for users in understanding and using the data effectively.

Changes

1. Added a new column for 'Principal Investigator' and implemented custom sorting for it.
2. Enhanced the sorting functionality for 'Reviewers' and 'Reviews' columns.
3. Enabled the columns button and expanded the table by default for better data visibility.
4. Integrated the preferred name of the user in the 'Principal Investigator' column, enhancing data relevance.
5. Updated the GraphQL query to fetch the 'preferredname' of the user, making the data more precise.
