Add utreexod project page

Adds a /projects/utreexod page covering the daemon implementation of Utreexo, its bridge-node role, and the current release line.

• adds data/projects/utreexod.mdx with grant context, release status, and current implementation work
• renames the project route and image from utreexo to utreexod

Closes OpenSats/content#88

I have a question though. According to what we previously discussed, we decided to provide a topic for a protocol and a project for the specific implementation.
Shouldn't this be the project page for Utreexod, while the general Utreexo protocol be moved the the topics?
