doc: rebrand Bitcoin binary names, paths, and data dirs to Avian#247

Replace all user-facing binary references (bitcoind→aviand, bitcoin-cli→avian-cli, bitcoin-qt→avian-qt, bitcoin-tx→avian-tx, bitcoin-wallet→avian-wallet, bitcoin-util→avian-util, bitcoin-node→avian-node, bitcoin-gui→avian-gui), config file (bitcoin.conf→avian.conf), and data directory paths (~/.bitcoin→~/.avianv5, %APPDATA%\Bitcoin→%LOCALAPPDATA%\AvianV5, Application Support/Bitcoin→Application Support/AvianV5) across all user-facing documentation. Upstream Bitcoin Core links, BIP references, and internal developer notes that reference Bitcoin by name are intentionally preserved.
