docs: add shim, drop drift-prone version column#13

Version column fell out of sync (natcheck showed 0.1.1 vs the formula's 0.1.4); the pinned tarball in each formula is the source of truth. Note shim's opt-in brew services mode.

Adds the shim formula (merged in #11/#12) to the README table and drops the Version column, which had drifted - natcheck showed 0.1.1 against the formula's current 0.1.4, since nothing in the bump process kept it in sync. Each formula's pinned tarball URL is the source of truth, so the column was duplicate state. Also notes shim's opt-in
brew servicesmode (it's the only daemon-capable formula).
