`--emulate` mode should override `DRIFT_GATEWAY_KEY` env var

I think it'd be more intuitive to use the authority passed in by --emulate if it's provided. Otherwise user might not know DRIFT_GATEWAY_KEY is set and wonder why they're not receiving events for the emulated account
