`write_subset` could allow a list of datasets to write

E.g. could only copy across gas particles, or just bound_subhalo for a SOAP file. Mutually exclusive options to "include" or "exclude" would make sense. Not sure if it's worth getting as granular as individual fields like "gas.coordinates".
